The Copper Carrot Bakery celebrates its one year anniversary in West Point

The Copper Carrot Bakery recently celebrated its one year anniversary of being a part of downtown West Point, and owners Nikki and Larry Franklin will be rolling out some new features just in time for fall. 

“We’re super excited about celebrating our year anniversary. So far, things have been great. We’ve enjoyed being in West Point,” Nikki said. 

Earlier this month, the bakery hosted a small celebration at their store with free desserts for the community to celebrate the milestone.

“The community has been super supportive as we’ve reached this one year anniversary. Our goal now is to just expand to be able to offer more,” Nikki said. 

With the success of their West Point storefront going strong, The Copper Carrot Bakery opened a second location in downtown LaGrange in February. Nikki said that storefront has also seen a lot of success, mostly with the foot traffic from shoppers. 

As summer comes to a close, The Copper Carrot Bakery will be taking the Carrot Mobile on the road to offer delivery services. The van will run in West Point and surrounding areas on select days, as well as in LaGrange on other days. 

The Carrot Mobile will offer delivery for up to 20 miles distance. 

That’s not the only new expansion coming this fall. The Copper Carrot Bakery will also be adding some flavors to their menu. 

The bakery already offers custom cakes, party boxes and desserts in-store. However, Nikki said they have decided to expand after taking requests and testing how well certain specialty desserts are received. 

“We started out offering a very small amount of dessert, simply because we’re trying to understand more of what the audience wanted,” Nikki said. “… So our goal is to start implementing them starting this fall.”

For example, she said, the rum cake, a southern specialty, has been highly requested as well as a variety of toppings for their traditional pound cake. 

The bakery also offers miniature sweet potato pies and miniature key lime pies; however, they have had requests for whole pies so they will be expanding that part of the menu as well.

For those excited to go by the bakery, they will also been adjusting their hours from the summer hours that were established earlier this year. 

“As the temperature cools down a little bit, we will pick those days back up,” she said. 

The Copper Carrot Bakery has had many collaborations over the last year from hosting meetings for Team WHIP, a local breast cancer awareness nonprofit, to participating in the recent Food Truck Festival put on by LaFayette Main Street. 

“It gives us the opportunity to step outside of the bakery a little bit. We’ve had our first food truck festival, and so that was exciting to be able to set up and to get our brand out there, and extend our reach and meet more people in the area,” Nikki said. “So we’re looking forward to doing more of those type things in the fall as we continue to hire and get staffed up.”

For one thing, Nikki said they are excited to soon offer cake decorating classes and birthday party reservations at the bakery.
